fix: scroll to content end instead of last item start (#410)

* fix: scroll to content end instead of last item start for chat bottom

Replaced all scrollToItem(totalItems-1) / animateScrollToItem(totalItems-1)
calls with animateScrollBy(Float.MAX_VALUE) which scrolls to the absolute
end of the content, placing the last message at the BOTTOM of the viewport
instead of the top.

Affected sites:
- Session switch auto-scroll (instant via tween(0))
- New message auto-scroll (animated)
- Send button scroll (animated)
- Scroll-to-bottom FAB (animated)
- Also fixes the same bug in the scroll-to-bottom button

* fix(#410): replace animateScrollBy with animateScrollToItem for Compose BOM 2026.03.01 compatibility
