feat: rename app from 'Hermes Control' to 'Hermes Mobile' (#412)

* feat: rename app from 'Hermes Control' to 'Hermes Mobile'

Updates the display name in launcher icon, About screen, and
landing/auth screen. Package name (com.m57.hermescontrol) unchanged.

* chore: update release workflow references to Hermes Mobile

Renames keystore file, APK artifact, and GitHub Release name
from 'hermes-control' / 'Hermes Control' to 'hermes-mobile'
/ 'Hermes Mobile'.
